The unique recipe of the drink was developed by technologists of the All-Union Research Institute of Brewing, Non-Alcoholic and Wine-Making Industry in 1976. Its ingredients, such as the medicinal herb St. John's wort, licorice and eleuterococcus root gave the drink its distinct taste and tonic properties. The Russian Company AQUALIFE retained the traditional receipt, due to which the drink engaged the hearts and won the recognition from the consumers.
The AQUALIFE Company has exclusive rights to produce and sell the Baikal drink both in Russia and in 30 countries around the world.

Birch sap is the sap directly tapped from birch trees. It`s collected only at the break of winter and spring by drilling a hole into its trunk (does not harm the health of the tree).

Birch sap contains 17 amino acids (incl glutamic), as well as minerals, enzymes, proteins, antioxidants, vitamins C and B. Сommercial birch sap is pasteurized and contains sugar.

Russian aristocrat Prince Golitsyn established the first economically successful Russian sparkling wine at Abrau-Dyurso. So successful was Golitsyn that in 1900 at the Paris World Fair, Novy Svet champagne defeated all the French entries to claim the internationally coveted Grand Prix de Champagne.

The new brand, named 'Soviet Champagne' (in Russian - Советское Шампанское) is a generic brand of sparkling wine, was created in 1928. The "father" of the new technology was Anton Frolov-Bagreyev, a former employee of Prince Golitsyn at Abrau-Dyurso. The technology of production was further improved in 1953 by Professor Georgy Agabalyanc, who received the Lenin Prize for that achievement. In 1975 Moët & Chandon bought a licence for production of sparkling wine by Soviet method.

Wine is made from a blend of Aligote, Chardonnay, Riesling, Sauvignon blanc, Muscat, Pinot blanc and Traminer grapes. Sweetness: Brut, Dry, Medium Dry, Medium Sweet (most popular in Russia) and Sweet.

Under European Union law, as well as treaties accepted by most nations, sparkling wines produced outside the champagne region, even wine produced in other parts of France, do not have the right to use the term "champagne". However, in 2011 the Russian Association of Sparkling Wine Producers said that it had reached an agreement with the Inter-Professional Champagne Committee that the terms of Russia's refusal to use French terms had been shifted to 2022.
